Wait, what’s the connection? Beans are one of the most sustainable foods, the kind of thing you want to eat for Climate Week.
Red beans and rice is a New Orleans Monday tradition and a classic Creole dish. Acclaimed author and poet Maya Angelou adored Creole cookery. She even worked as a Creole cook when she was young. You probably know her better as an author of books including her memoir, I Know Why the Caged Bird Sings I read it when I was 12, and it remains one of the most moving books I’ve ever read. I still have my battered copy. Good thing, because it’s one of the books banned from Florida school libraries. Sheesh.
Put all that together and you have a smoky, comforting, delectable plant-based dish to honor Banned Books Week and Climate Week. It’ll sustain you and the planet too.
